Cacao Fruit and Nut Bars
1 tbsp white chia seeds
1 cup walnuts
125g dried apple
½ c shredded coconut
1/2c rolled oats
¼ c cacao powder
1/2c coconut oil
2 tbsp maple syrup or natural honey
- Place 1 tbs chia seeds into a small bowl with 2 tbsp water. Set aside for 5 minutes until thickened. Line a 18 x 28cm slice pan with baking paper.
- Process walnuts, dried apple, sultanas, coconut, oats and cacao in a processor until finely chopped. Transfer to a large bowl and set aside.
- Add dates to processor with soaked chia, coconut oil and maple syrup or honey. Process until it forms a paste. Return half of the walnut mixture to processor and process to combine. Transfer to bowl with remaining mixture and stir.
- Press mixture evenly into pan and top with the extra coconut if desired. For a more decadent option, drizzle with melted chocolate, chill for at least 2 hours to firm. Cut into bars to serve. For a higher energy, higher protein options serve with a smearing of natural peanut butter.
