- 1 Cup of baby spinach leaves
- 150g green beans -washed, trimmed and halved
- ¼ medium sized avocado
- 30g good quality, crumbled fetta
- lemon to squeeze
- 2 tbspn of olive oil
- Toss together spinach leaves, green beans and avocado.
- Top with crumbled fetta.
- Drizzle over olive oil and juice of 1/3 lemon or to taste.
- Add 150g grilled chicken for a more filling lunch or dinner option.
