Quinoa, Oat & Berry Winter Porridge
¼ cup cooked tri-coloured quinoa
¼ cup oats, soaked in water overnight or for at least 30mins
½ cup frozen mixed berries
1 tablespoon chopped mixed nuts, seeds and coconut e.g. pepitas, almonds, walnuts, shredded coconut
½ tsp cinnamon
½ tsp nutmeg
½ vanilla bean
½ cup milk/almond milk/water
- Soak 1/4 c oats overnight in water with cinnamon, nutmeg & vanilla bean. This helps the oats cook quicker in the morning, avoiding the processed, higher GI quick oats that are available.
- In the morning, cook oats with milk or desired alternative. Stir through 1/4 cup cooked quinoa & 1/2 c frozen berries. Top with 1tbs chopped nuts, seeds & shredded coconut.
- Serve with a drizzle of fresh honey if desired.
